We select Midwestern meats, including Turkey from Pequot Lakes, MN; Bison from the Fargo/Moorehead area of MN and ND; and Berkshire pork from a cooperative in Southern MN and Northern IA. All of these premium meats are then transformed into a delicious selection of smoked and cured delights, including salami, bacon, pastrami, pate, and ham. Our approach is to utilize the very best in technique and incorporate our unique style, creating unforgettable flavor and unmatched quality.

Pastrami
Luscious eye of round is marinated in garlic and spices, rolled in black pepper and coriander, and smoked to meaty, succulent perfection. Terrific stacked on rye, served with sauerkraut, or even piled on pizza! Featured on "Diners, Drive-Ins, and Dives."
